Blueberry Lattice Pie

I've been on medical leave for the past 5 days with a bad flu from hell and massively blocked ears. What does a bored girl do when she's cooped up at home? Bake.

While browsing the internet, I came across this awesome website - www.inspiredtaste.net with a wonderful recipe for a flaky pie crust. For their pie crust, they use the cutting technique using a pastry cutter and a spatula to gather the dough together after sprinkling ice water over the butter flour mixture - this way there's hardly any hand contact with the dough meaning lesser heat! I love it. I don't own a pastry cutter, and for those who don't have one too, fret not for we can simply use two knives to achieve the same results :)

Vanilla Bean & Earl Grey Tealoaf

I've been neglecting this space so badly I deserve a beating. In any case I've resolved to start again and this time hopefully keep at it. You'll be glad and also peeved to know I finally got myself a good camera and then tossed it aside without uploading any pictures I took. Instead, I've been using my iPhone to take photos of everything - blame Instagram! Now after almost a full year of owning a Nikon camera, I will start making use of it.. in my next post!

For now, lets bake a tea loaf.

I love earl grey tea and I adore vanilla. Put those two together and its a match made in heaven. You can't deny the aroma this loaf perfumes your house with. Its just.. dreamy..

Ingredients
180g plain flour
1 1/2 tsp baking powder
1/4 tsp salt
125g unsalted butter, softened
120g caster sugar
2 medium eggs
1 vanilla pod
1 tsp pure vanilla extract
240ml milk
6 tbsps loose earl grey tea leaves

1. Preheat oven to 170 degrees celsius. Grease and flour an 8-inch cake pan or medium loaf pan

2. Sift the flour, corn flour, salt and baking powder together. Set aside.

3. Heat milk with 4 tbsps earl grey tea leaves to a light simmer. Leave to infuse for about 5 - 10 minutes then strain and set aside to cool. Alternatively, if you don't have loose tea leaves, simply heat the milk with about 6 bags of earl grey tea and leave to infuse until you need it.

4. Beat the butter with caster sugar and 2 tbsps loose earl grey tea leaves till light and fluffy. Split open a tea bag if you don't have loose ones. I would recommend a TWG tea bag for this as the aroma is just... sublime.

5. Add in eggs, one at a time. Beat between additions.

6. Split the vanilla pod and scrape the seeds into your butter/egg mixture, add in vanilla extract. Beat gently to disperse the seeds into the batter.

7. Pour dry ingredients in one go and beat on low to incorporate. Add in your infused milk as the last ingredient and beat gently till combined. Do not overbeat. Your batter should be silky smooth and gorgeously perfumed.

8. Pour into prepared tin and bake for 35 - 40 minutes or until a wooden stick stuck in the middle of the loaf/cake comes out clean.

2012 BITCHES

Hi y'all. I'm back. After my previous post about a year ago, I finally have some 'inspiration' to type letters and fullstops in my little onsugar space. 2011 was a heck of a year. Eventful and uneventful. As most of you will already know, my baking career has been put on hold for a while. I'm off pursuing bigger things at the moment! Hopefully, it'll give me the little boost I need to fulfil my dream of being a professional pastry chef!! Watch this space. Haha chey ba ;)

onetheme.tumblr has vanished. THE HORROR. Needless to say, I was pretty devastated when I found out last year. But weheartit is still around and I still browse a little when I have the time. Merry 2011!

1st Jan. 2011. New start to a new year. Pink Dolphin for breakfast in the mornin. Mmmm mmm looks like its gonna be one awesome year!

Witnessed one of the most beautiful sights in the World last night. Ushered in the New Year with Nik and The Azkabans. We wrote our wishes on paper lanterns, lit them up and watched as they floated away into the night - like giant yellow bursts of light gently folding into tiny golden stars, peppering the inky sky. If you watched rapunzel, then you'll know what type of spectacular scene I'm referring to, albeit in real true blue life, but in a much smaller scale.

So many people to thank for 2010. Last year was the worst, and also the best year I've ever had. Too many occasions of anger and hurt, too many disappointing incidents, too many humiliating sequences. But things worked out AWESOME in the end. So I must say, I have thus added some credit to the old cliched term being 'there is always a rainbow after the rain'. (Ok, it is STILL a very stupid phrase. It is stating the bloody obvious, but you get the picture)

So, like how celebrities thank their contributors and loved ones after getting a trophy, I'm going to do so too.

To:

Nik, who has been the best thing that has happened to my life thus far. I have much to thank you for. From introducing Bjork, The Chemical Brothers and every song possible by Radiohead, to Family Guy, The Office and Fresh Prince, to PSP games and kicking chickens in Fable, to Tuna and Cheese and the BEST scrambled eggs in the history of mankind, to Triforce, to living to the fullest and never giving up, to glorious late nights and Back To The Future, to Hope, to Faith, to Swearing all the time, to Kismet, to iPhone typos, to amazing presents and beautiful thoughts, to surprises and ikea meatballs, and to the most important thing you've ever done for me - existing and appearing at the very right moment. Oh, and also being the only person to eat an insane amount of double cheeseburgers with me. For all the time, money, blood, sweat, effort and thought you've put into me, I thank you and I love you b! Even without a Tiffany's, I will still and always be yours.

Tracy, for your time and effort in providing the best advice that has brought me to where I am now - happy, content and with a decent paycheck. For the meal at The Marmalade Pantry, the meal at your place, the meals everywhere, to saying I'm still cute when drunk (lol!) and always being so supportive and sweet. Thank you!

Rev, for your endless support and cupcake gorging, to always being there when I need help, for talking on the phone for hours while I eat my spicy thai noodles even when you're not a talk-on-the-phone type of gal. For surprising me at Whips with icecream and smiles and enduring my endless spammage of texts cause I keep forgetting you own a normal minion phone (hehe!) Also, for making me CONSTANTLY hungry with your pictures of delicious food, and enticing me with sudden random texts of what you had for breakfast. When we were friends in poly, I never thought we'd be THIS close, but wow, you're like a sister from another mother.

Andrea, Peipei, Farouk, Lina & Haikel, for being about the only bunch of people I feel completely at ease with even at my lowest. Even if I'm wearing beggar's clothes, I am absolutely certain you guys will let me into your houses (and then continue to dress me up, except for Haikel who won't care about dressing up) For the amazing birthday surprise, the awesome Universals trip and all the chilling at Anya's, thank you guys! And also for believing in me and supporting me no matter what. I love you all.

Verena, for hoisting me up and getting embarrassed while I, well, embarrassed you in the middle of zouk, for teaching me how to liven up and have some fun, for being there when I need a friend, for being there when I need to bitch, for bitching even when there is no need to and for forgiving when I haven't yet forgiven myself.

Eunice & Cheryl, what can I say? Famous 5 won't be Famous 5 without you two. One reality checker and One insanely happy person. For all the laughter you guys have induced when we were out for our 'weekly dinners', my one big ab thanks you. <3

Armanda & Dessy, although we hardly meet, I'm still so very amazed we can talk for hours and hours about everything and anything! It was awesome just talking with you and Regina that day. Also, the random movies in your home theatre. Hehe! Princess Armanda of Wales! And Dessy, you have to come back from indo!  See you soon for your birthday celebration when Dessy's back!!

Brandon, for teaching me the trick to dehydrate yet retain the sweetness of strawberries, for lending me your God damn heavy but amazing cookbook, for inspiring me to learn more about baking and for teaching me the tricks to perfecting pasta cooking. Also, for the AMAZING bbq and delicious caramalised onion pasta. Ohmygod, who would have known such a simple condiment can produce a meal fit for a king.

Ah boy, Justin, Isaac, Shawn, Jeremy, Huifern, Daryl, Ziona, Siow, Sunesh, new found friendships which you know will last for a long long time is a joy and a thrill most people find only once in a while and with just a couple of people. To hang around with 'new people' and just chill is something I was very uncomfortable with in the past. I wasn't used to making new friends just like that. But after meeting you guys, I can't believe how comfortable I've become with ya'll. Sometimes it still amazes me. For encouraging me to sing, helping me get cheaper perfume, sharing pizza with me and including me is really something I am very thankful for. You guys are awesome. (:

Mark & Nat, for being concerned enough to be annoyed when I don't turn up at meetups, I am strangely very thankful for! I've met Mark already k Nat, when am I going to see you? But really, you guys will always be very special to me.

Nicholas Joshua Lee & Sarah Ismail, for all the fun times at Mediacorp, staying late with me, eating tong sandwiches, amazing spicy malay food and most importantly, being true friends. Also, for all the wise words and impeccable fashion sense! <3

To Melody Ong, Bryan Tan, Waylon, Syaz, Nory Suffian, SX, Pow and everyone else, a very merry 2011 and a huge thank you for helping me get past 2010 with a smile!

They were right about being caged up for too long. A trapped animal goes ballistic when it gets freedom. We are animals. We can go mad as well. After not being able to do whatever the fuck I wanted to do for years, with restrictions piled beyond sky high, I'm tasting freedom for the very first time. And.. I'm going ballistic. All I want is to be young, wild and free. Skinny with long ragged hair. Perfect complexion. I'm going mad with freedom and I blame it on you.

I mean I feel like that paragraph up there sometimes, not all the time. I feel like I've been robbed of those few perfectly good years of my youth by being a complete arse of a pushover. So many experiences. So many opportunities. But I think back and although I'm angry, there is really no point in staying so. The past is the past, the future is ours to shape and mine is gonna turn out FANTASTIC!!!!!! I kid you not.

Been sick for the past 3 days. Been lazing about at home watching The Office and sleeping so much my back feels sore. Am back on my junk diet of everything + Redondo Luxury Cream Wafers. The vanilla flavoured version is pretty good as well. Like meiji milk hello pandas on crack.

HOLY MOTHER OF COW I MUST MUST MUST MUST MUST MUST MUST GO THERE BEFORE I DIE. I don't care if you think I'm lame for lovin' Potter, you're lame for not loving The Boy Who Lived.

I must say the latest Harry Potter movie (Deathly Hallows pt. 1) is WAYYYYYY better than the last (Half Blood Prince). MY GOD WAS HALF BLOOD PRINCE BORING. No climax, no nothing, and Horace Slughorn was so badly portrayed. But yeah, this year's is alright, not as awesome as the book of course, and there are many loopholes in the movie, but its alright. I like it. Ok enough about Harry Potter. I can go on for days without sleep talking about Harry Potter. K bye!

Wake up in the mornin feelin like P Diddy. HAHA kiddin. Thats today's soundtrack of the day. Catchy mainstream junk. Anyway, I managed to wake up at 630am today to 'wake' Nik up! He was obviously awake already but nonetheless still impressed I managed to mumble some words that made some sense.

Its been a long long while since I've updated with anything much. Tracy was saying I should start a food blog. I seriously think I should. Like a picture/food/lifestyle blog. With bits and pieces of personal information. I've been thinking though, what do you need to start a blog like that.

1) A good camera. 2) Some spare cash. 3) A voracious appetite. 4) Knack for writing.

Houston, we have a problem. I can only fulfill point 3 and half of point 4. So, it'll have to wait, but IT WILL DEFINITELY HAPPEN IN SOME POINT OF MY LIFE!

Two surprise birthday dinners this year! How lucky am I?! Nik planned the first with Famous 5. OMG I can safely tell you I was so super shocked to see the whole bunch of them clustered at Cafe Del Mar. Andrea & co planned the other one at Farouk's where he COOKED A WHOLE MEAL!!! OMGGGGG I AM FUCKING LUCKY :') I LOVE YOU GUYS VERY MUCH!
